Juicy, ripe peaches, atop layers of cream cheese and honey, sprinkled with pistachios and sandwiched between two slices of crisp, golden toasted bread.

Welcome back to the third and final instalment in the Sweet Cheesus Series. A reminder in case you’ve forgotten what it’s all about: grilled cheese sandwiches are being given a sweet makeover. Strip out the savoury, heavy cheese. Add in mild, creamy cheese. Chuck some fruit on it, toast it and there you have it. The best thing about the Sweet Cheesus Series is that everything is pretty much interchangeable. You can mix and match your favourite fruit combinations with any of the three cheeses used in these recipes – mascarpone, ricotta or cream cheese. Go crazy!
Part one saw a grilled cheese sandwich full of raspberries, Nutella and mascarpone. Part two combined the flavour sensation of blueberries, lemon and ricotta. And you guys! I saved the best Sweet Cheesus recipe for last. Today I bring you Peach, Pistachio and Cream Cheese Toasted Sandwiches. Oh my word. These were my absolute favourite of them all. The other two were good, nay great, but this peach one is another level.
Maybe I’m biased because peaches are one of my all-time favourite fruits. But I swear to you, this one had the perfect creaminess, the perfect sweetness, the perfect juiciness, the perfect amount of crunch from the pistachios, it was just perfection in a toasted cheese sandwich.
Now I’ve just realised that in all three posts I’ve been switching between using grilled sandwich and toasted sandwich without much of an explanation. I apologise. When I was growing up, we always called them toasted cheese sandwiches. I think it’s an Australian thing. From watching a hell of a lot of American tv and movies though, I know that over there, they are called grilled cheese sandwiches. Call them what you will. Embrace the sweet cheesusness and everything will be alright!
Peach, Pistachio & Cream Cheese Toasted Sandwiches
Prep Time: 5 minutes
Cooking Time: 6 minutes
2 slices thick-cut bread of your choice (I used white, but fruit loaf tastes great as well)
3 tbsp cream cheese
1 tbsp honey
1 small, ripe peach, thinly sliced
1-2 tbsp shelled and chopped pistachios
2 tbsp butter
- Spread half the cream cheese onto each slice of bread. Drizzle honey onto one slice of the slices, then top with peach slices followed by chopped pistachios. Sandwich the two slices of bread together. Spread half the butter onto the top of the sandwich.
- Place the sandwich, butter side down, into a small frying pan, then spread the new top side with the remaining butter. Place pan over medium-high heat and cook for 3-5 minutes, until the bottom of the bread is toasted and golden. Use a spatula to carefully flip the sandwich over and cook for another 2-3 minutes until the bottom is toasted and golden. Remove from frying pan, slice and serve immediately.
